• You Look Like a Thing and I Love You: How Artificial Intelligence Works and Why It’s Making the World a Weirder Place by Janelle Shane

• Through the Language Glass: Why the World Looks Different in Other Languages by Guy Deutsche

I am currently reading You Look Like a Thing and I Love You: How Artificial Intelligence Works and Why It's Making the World a Weirder Place by Janelle Shane.

You can find the first book (Speech and Language Processing) online! Just search it up and you should be able to find a PDF version for free. The other two are available on amazon if you want to read it.
